Dried vs Fresh Substitution
Converting between fresh and dried โ the essential ratios every cook needs
Cuban oregano is significantly more potent than common oregano (Origanum vulgare). When substituting dried Cuban oregano for regular dried oregano in any recipe, use half the amount and taste before adding more. The essential oil concentration is 2โ3x higher, which can easily overpower a dish. When using dried Cuban oregano, the conversion from fresh is even more dramatic โ use roughly one-quarter the fresh amount.

Troubleshooting Post-Harvest Issues
Common problems and their solutions
Mold on Drying Herbs
Humidity too high or airflow insufficient. Discard affected batch. Increase ventilation, use a fan, or switch to oven/dehydrator drying. In humid climates, always use the rack/screen method rather than bundles.
Brown, Not Green
Temperature too high during drying, or leaves were damaged/bruised before processing. Always harvest undamaged leaves and dry at low temperature. Brown herbs are still usable but have reduced flavor.
No Aroma After Drying
Either: (a) Dried at too high temperature, (b) Stored too long, (c) Exposed to light/air during storage, or (d) Leaves were already past their prime when harvested. Try a fresh batch with stricter temperature control.
Oil is Clear, Not Green
Not enough plant material, or oil was heated too high during infusion. Use more leaves (at least 1 cup per cup of oil) and keep temperature below 60ยฐC. Re-steep the same oil with fresh leaves for stronger color.
Tincture is Weak
Not steeped long enough, or alcohol percentage too low. Use 80-proof (40% ABV) minimum. Steep for full 6 weeks. Use more plant material relative to alcohol.
Powder is Clumpy
Herbs weren't completely dry before grinding, or moisture entered during storage. Re-dry in oven at 50ยฐC for 30 minutes. Add a few grains of rice to storage jar to absorb moisture.
Frozen Herbs Stuck Together
Flash-freezing step was skipped or incomplete. Spread leaves individually on baking sheet first. Freeze for 2+ hours before transferring to bags. Shake bag to separate any that stick.
